Cheese Straws

They crunch and melt in your mouth, releasing its cheesy goodness.  So nourishing that you can’t help yourself, you are eating like a rabbit with wild abandonment.  This Cheese Straws recipe is so easy to make that it will become a favourite, just like it is at every St Helena party.

500 g Plain White Flour

500 g Grated Cheddar Cheese (Medium/Mature)

250 g Butter

1 Tsp Cayenne Pepper (To taste)

1 Egg

Rolling Pin, Bowl, Pastry Brush, Knife, Baking Tray, Cooling Rack

Instructions

  1. Crumble flour and butter together by hand.
  2. Mix in the grated cheddar cheese and chayenne pepper. Combine well.
  3. Knead the crumble mix into a hard dough. (It will look impossible for a while but keep at it. Don't be tempted to add water, trust us it will get there as the cheese will melt as you work.)
  4. When ready, roll out and cut into about 1.5cm x 10cm sized 'straws' or any other shape you like.
  5. Brush with a beaten egg for shine.
  6. Line your baking tray with parchment and bake in a preheated oven (180°c) for 12 minutes till golden.
  7. Let them cool on a rack, Cool, and voila cheesy goodness!

Notes: For a twist, after brushing with the egg, sprinkle on a herb like rosemary or seeds like black poppy seeds.  Favours which complement the cheese and add to the traditional St Helena cheese straws.Can make these cheese straws with less ingredients than the 500g of flour and cheese listed here.  Just make sense that the amount of flour is equal to the amount of cheese, and the butter is half of whatever that amount is.
